Kimber's Shrimp & Grits
Ingredients needed:
1/3 cup dry white wine
1/2 to 1lb peeled/deveined shrimp
2 chicken bullion cubes or about 2 tbs
2 servings grits
5 slices smoked gouda cheese
1 small sweet onion
1/2 can Rotel tomatoes (mild)
1 large fresh tomato
6 slices thick cut bacon
1 1/2 tbs garlic
2 tbs butter/margarine
garlic powder, onion powder, cayenne pepper, chilli powder
During this time dice onion and chop tomato. Once bacon is finished place it on paper towel to insure crispness. Keep bacon grease.

6 slices thick cut bacon
1 1/2 tbs garlic
2 tbs butter/margarine
garlic powder, onion powder, cayenne pepper, chilli powder
Start by cooking bacon till crisp. Avoid chopping up before hand as it is much easier to cook in strips and break into pieces when done.
Put water on for grits and add 1 tbs or 1 cube chicken bullion to water.
During this time dice onion and chop tomato. Once bacon is finished place it on paper towel to insure crispness. Keep bacon grease.
Add tomatoes, Rotel, garlic, and onion to bacon grease cook until onion is soft.
Add white wine. Bring to light boil.
Add spices to shrimp about 1/2ts each and stir.
Add cheese and butter to grits and place on low heat.
Place shrimp carefully on top of tomato mixture & cover until shrimp are throughly cooked.
Ladle grits onto plate and then ladle shrimp and veggies onto grits making sure to also get broth. Top with bacon & enjoy :)
