Turkey Burger Sweet Potato Shepard's Pie





Ingredients

1 LB Ground Turkey 
2 Chorizo Links
2 Lg Sweet Potatoes
1 Medium sweet onion
1 Bullion cube
1/4 cup wine
1 sprig Rosemary
1/2 Tsp Ground black pepper
1/2 Cup Parmesan Cheese
1 Cup Shredded Cheddar Cheese 
Olive oil non stick spray






The brand of chorizo I use can be found in the refrigerated Latin Foods Section and the bullion in the dry Latin food section






Cut potatoes into 1" cubes and boil until fork tender. Combine chorizo and turkey. Cook until meat begins to crisp. Create a well in center of meat. Add bullion cube, rosemary, and all but a splash of wine and stir until liquid is reduced completely. Place mixture into prepared baking dish sprayed with olive oil nonstick spray.  



Add diced onion and rest of wine to skillet that meat was prepared in (do not wipe out). Caramelize onion. Drain and mash sweet potato then spread on top of meat mixture. Cover mixture with shredded cheese. Bake for 20 minutes or until cheese is gooey melted.


Too good to even clean up the plate for =] Healthy and filling meal even a picky eater could enjoy. This meal can be customized to your family's taste such as substituting onion for thinly sliced squash etc. We hope you will enjoy!
